Lecithin is a natural fat molecule that can be found in plants and animals. It is rich in phospholipids, which are components of the structure of cell membranes. Phospholipids help control the passage of nutrients into and out of cells. It is also involved in the transport of fats and keeps the level of lipids in the circulation in proper proportion.
Lecithin is found in liver and other organ meats, soya and egg yolk and is used in the food industry as a fat emulsifier. It also contains B vitamins, especially choline. Although lecithin is a fatty substance, it functions as an emulsifier.
