Choline is a water-soluble trace element related to other vitamins such as the B vitamins. Like the B vitamins, choline stimulates the process of metabolising nutrients such as carbohydrates, proteins and fats for energy. The transport of fats, both cholesterol and triglycerides, from the liver to the body's cells also requires choline and is necessary to prevent fat accumulation in the liver.
Choline is one of the structural components of fat and can therefore be found in foods that naturally contain fats such as liver, oily fish, legumes and beef.
Inositol is a water-soluble structure and forms part of all cell membranes in the body. It acts in much the same way as choline. Inositol, although not technically an essential B vitamin because it can be synthesised in the body, is a very important nutrient. Foods that naturally contain inositol include citrus fruits, lecithin oil, seeds, whole grains, nuts and green leafy vegetables.
